    Wash and dry all produce. Finely dice tomato . Trim and thinly slice scallions . Halve lime . In a small bowl , combine tomato, scallions, a big squeeze of lime juice, and a drizzle of olive oil . Season with salt and black pepper . Halve, peel, and thinly slice onion . Core, deseed, and dice poblano pepper into ½-inch pieces. Drain black beans over a separate small bowl , reserving the liquid.

    Heat a large drizzle of cooking oil in large pan over medium-high heat. Add the onion and poblano and cook until just softened, ⏱️ 5 minutes . Add Southwest Spice Blend and half the beans (a roll of you’ll use the rest in the next step). Cook, stirring, until fragrant, ⏱️ 2 minutes . Season with Salt and Black Pepper . Remove pan from heat.

    Heat a drizzle of cooking oil in small pot over medium-high heat. Add remaining beans and cook, stirring, until slightly softened, ⏱️ 2 minutes . Add ¼ cup of the reserved bean liquid (or ½ cup for 4 servings). Simmer until warmed through, ⏱️ 1 minute . Reduce heat to low and stir in Butter . Remove pot from heat and mash beans with masher until mostly smooth. Season with salt and pepper to taste.

    Spread flour tortillas with mashed beans. Place a small amount of filling on one half of each tortilla, then sprinkle with Pepper Jack Cheese . Roll up tortillas starting at the filled end, to form flautas, and set seam side down on a plate.

    Wash out pan used for filling. Heat a large drizzle of cooking oil in the same pan over medium-high heat. Add flautas seam side down. Cook, carefully turning, until golden and crispy, ⏱️ 2 minutes per side. Work in batches if necessary.

    Divide flautas between plates and top with Guacamole and Sour Cream . Serve with any remaining filling or toppings on the side.
